Behind the Bean:
Finca Las Nubes (“The Clouds”), located in Pitalito, Huila, is managed by Claudia Samboni and Rodrigo Sanchez, who acquired it in 2020. The farm cultivates a range of varieties, including Purple Caturra, Pacamara, Pink Bourbon, and Yellow Bourbon. It also serves as a hub for coffee process innovation.
Situated near the Laboyos Valley, Las Nubes benefits from the fresh mountain air and natural reserves, creating ideal conditions for producing exceptional specialty coffees.
Processing Method
Selection: Cherries are handpicked at 24°–28° Brix and pH 5.6–5.9.
Fermentation: The cherries ferment in sealed bins for 100 hours.
Drying: After fermentation, they dry on sun beds for 30–35 days.
With a cup score of 88, this coffee offers a complex flavour profile that bursts with sweet strawberries, papaya and honey when brewed as a filter. When prepared as an espresso in milk-based drinks, we picked up a rich and creamy strawberry cheesecake.
