Behind the Bean:
A coffee produced by Antonio, Paula & Esther Londoño. New to specialty coffee production, El Eden are making up for their relatively low altitude through the cultivation of interesting varietals and through simple, but quality-focused processing.
This coffee is picked, floated to get rid of impurities, immediately pulped and then left in an open fermentation tank for 18 hours. Afterwards the coffee is washed twice and dried in a mechanical drying system at a low temperature to preserve the natural character of the seeds.
With a cup score of 86.5, this coffee highlights notes of stone fruit, melon, and florals when brewed as a filter. When milk is added, the flavor shifts to a smooth vanilla toffee.
